1. Stone Crabs with Mustard Sauce
Ingredients:
- 2 large egg yolks
- 1 small clove of garlic
- ½ teaspoon of turbinado sugar
- 3 tbsp. of dry mustard
- 1 cup canola oil
- ½ shallot peeled and minced
- 1 tbsp of Dijon mustard
- Lemon extract
- ½ tsp. of cayenne pepper
- 1 tsp salt
- 5 lbs. stone crab claws, cracked
Preparation:
- Mix the dry mustard, a dash of sugar and 2 tablespoons of water and leave it for 5 minutes.
- Sautee oil, garlic and shallot for about 1 minute
- In another bowl, whip eggs for 1 minute, add lemon juice, Dijon mustard, salt and pepper
- Add the sauté, the dry ingredients together, whisk to combine
- Cover and chill for 30 minutes and pour on the crab claw
2. Mini Crab Melts
- 16 sliced sourdough bread
- ¾ cup mayo
- ¾ cup lemon extract
- ½ tbsp. salt
- 3 tbsp chopped dill
- 12 ounces crabmeat, cleaned
- 32 roma tomato slices
- 2 tbsp diced onion
- 1 cup grated cheese
- ¼ tbsp black pepper
Preparation:
- Arrange bread slices next to each other and broil for 1 minute in pre heated broiler
- Whisk mayo, dill, lemon zest and salt in a mixing bowl, crab, onion and more salt. Stir well.
- Spread mayo evenly on toast, top with tomato and cheese. Bake until cheese melts, sprinkle with black pepper
- Serve immediately
3. Deviled Crabs
Ingredients:
- 6 large eggs
- 1/3 cup lemon juice
- 1 cup fresh chopped green onions
- ¼ cup ground nutmeg
- 1 lb. stone crab meat
- 2 tbsp grated lemon grind
- 1 ½ cup of melted butter
- 5 cups soft breadcrumbs
- ½ tbsp off sea salt
- 1 cup chopped parsley
- ¼ tsp ground pepper
Preparation:
- Combine all first six ingredients into a large bowl. Then, add 1 cup of melted butter, 4 cups of breadcrumbs and then the next 3 ingredients. Place crab mixture into the baking carapace or shells if not on individual baking dishes
- Top all the servings evenly with the remaining 1 cup of breadcrumbs. Drizzle evenly into the butter . Put in preheated oven then set it to 400 degrees for 20 minutes or until thoroughly well done. Turn oven setting to broiling state and then wait for three minutes or at least until golden brown
- Serve immediately
